Yamagata may be Tohoku's most rewarding single prefecture. Ginzan Onsen — a cluster of Taisho-era wooden ryokan in a narrow gorge — offers Japan's most photogenic winter village. Mount Zao produces its extraordinary juhyo — ice monsters — each February, when layers of ice coat the fir trees into vast white sculptures. Yamadera, a temple complex built into a mountainside in 860 AD, requires 1,015 stone steps and rewards with views across a valley that the poet Matsuo Basho described as one of the quietest places he had ever heard. And throughout it all, the prefecture produces sake and wagyu of exceptional quality.
